Cold pasta with Parmesan


Ingredients for 2 persons

Cooking method:

    • Boil pasta, place it in cold water and allow to cool.
    • Wash eggplant, cut lengthwise into 4 pieces, and cut into cubes
    • Fresh cherry wash and cut in half
  • Heat the oil in a saucepan, add the garlic and eggplant, simmer for 10 minutes
  • Add fresh cherry, simmer on high heat for 10 minutes
  • Add oregano, salt and pepper to taste

Mix with pasta, serve cold
