Cold pasta with Parmesan
Ingredients for 2 persons
- Federici No. 023 fluted Feathers 200 gr
- 2 eggplants
- 1 handful cherry tomatoes,
- 1 teaspoon dried oregano,
- Extra virgin olive oil
- Salt and pepper to taste
- 1 clove of garlic
Cooking method:

- Boil pasta, place it in cold water and allow to cool.
- Wash eggplant, cut lengthwise into 4 pieces, and cut into cubes
- Fresh cherry wash and cut in half
- Heat the oil in a saucepan, add the garlic and eggplant, simmer for 10 minutes
- Add fresh cherry, simmer on high heat for 10 minutes
- Add oregano, salt and pepper to taste
Mix with pasta, serve cold
